Cupcakes| Shaurya Aggarwal

Ingredients: 3/4 cup butter 1 cup castor sugar 1 cup hung curd 1+1/2 cup Maida 3/4 cup cocoa powder 1 tsp coffee powder 1 tsp baking powder 1/2 tsp baking soda 1/4 cup milk a pinch of salt Instructions: 1. In a bowl, add Maida, sugar, cocoa powder, coffee powder, baking soda, baking powder and salt, whisk together until it is well combined. 2. In a large bowl, whisk sugar and butter until the mixture is light and fluffy. 3. In the same bowl, add hung curd and whisk until combined.  4. To this bowl, add the dry mixture and mix well until there are no large pockets.  5. Now add milk and mix well. At this stage do not over mix the batter, so that the cupcakes turn out to be fluffy and soft. 6. Preheat the micro at convection (180 degree Celsius) 7. Line your cupcake tray with cupcake liners. Using an ice cream scoop fill 3/4th of each liner. 8. Bake these at 180 degree Celsius for 20-25 minutes.
